Our role in the project
We are pleased to see the completion of the latest three airport retail units we've been involved in at Edinburgh Airport: Seoul Bird, Pizza Express, and ICONS Sports Bar.
Three Commercial Units Completed in Edinburgh Airport
DSSR designed all MEP services for the reconfiguration of three retail units within Edinburgh Airport for Airport Retail Enterprises: Seoul Bird, Pizza Express, and ICONS Sports Bar.
For each of these projects, the units were designed from a stripped-back shell by a team of specialist consultants working together to coordinate all elements, ensuring the design met the strict airport’s air-side requirements.
The Seoul Bird unit is the Korean fried chicken chain’s first Scottish and airport branch, serving gourmet burgers, rice bowls and their famous fried chicken. Inspired by the melting pot of cultures in Korean cuisine, the unit has transformed the departure lounge with its high-impact aesthetic and eye-catching signage, offering a standout F&B experience.
Brian Gillan, COO of Airport Retail Enterprises:
“I had the pleasure of working closely with DSSR on several projects at Edinburgh Airport. They provide full mechanical, electrical, and public health design services. The DSSR team supported the successful delivery of the Soeul Bird, Pizza Express and Icons Bar units, ensuring all designs were fully coordinated with ARE’s operational requirements, programme constraints, and airport technical standards.
“Throughout each project, DSSR took a proactive and collaborative approach, responding quickly to design changes, working closely with ARE, contractors and suppliers, helping to maintain a tight programme in a live airport environment.
“DSSR will be our first consideration for all future projects.”
